Euphemia Haye Unveils 2011 Fall Lineup of Chef Raymond Arpke’s Popular “Lesson Luncheons” Cooking Classes

Euphemia Haye owner and executive chef Raymond Arpke unveils his exciting new lineup for the 15th season of “Lesson Luncheons,” demonstration-style classes where he cooks while guests observe, interact and then “wine and dine” upon the gourmet luncheon he has prepared. Every year, the classes have been sold-out events, so do not miss your chance to be one of the 30 who watch and enjoy Chef Ray’s “cooking theater.”

The “Lesson Luncheons” first class will be held on Wednesday, October 26th, featuring “Mediterranean Delights” which includes Carrot, Orange and Ginger Soup with fresh Cilantro, Braised Mediterranean-Style Chicken with Creamy Garlic and Parmesan Polenta and St. Germain infused Panna Cotta with whipped cream and fresh mint. Chef Ray is particularly looking forward to teaching this class because many of the dishes are amongst his all-time favorites, “These three courses are just yummy,” says Chef Ray. “I really like the polenta, the chicken with olives and the panna cotta. They’re all just my favorites.”

Chef Ray has a passion for teaching the “Lesson Luncheons” and delights in sharing some of the trade secrets he has learned from over 35 years in the culinary industry. “There’s something in it for everyone. Most of the people who attend are interested in cooking, but even the novice will enjoy it,” says Chef Ray. “They’ll pick up a few things and get something good to eat and drink as well!” Each guest will watch and interact with Chef Ray as he prepares the gourmet lunch. The Chef teaches in a humorous and easy-going way.  The classes are a fun atmosphere where everyone can relax and enjoy. Participants will also receive a take-home packet of recipes and tips so you can impress others by making this magical meal again at home. Everyone leaves with some inspired entertaining ideas that can be put to good use during the upcoming holiday season.

Each class runs from 10:30 a.m. to 1:30 p.m. and takes place in Euphemia Haye’s main dining room. Chef Ray starts promptly at 10:30, so guests are asked to arrive a few minutes early to settle in and have some time to enjoy some of Euphemia Haye’s addicting banana nut bread and imported coffee.  Each of the three courses is accompanied by a perfectly paired glass of wine. The wines served during class are also available for purchase that day at a deeply discounted rate for students. Classes hold 30 students and the fee for each class is $60 which includes gratuity.

    Red Bell Pepper Chowder with Corn and Potato, Grilled Salmon and Red Velvet Cake
  • “Fall In” – November 30, 10:30 – 1:30
    Apple Craisin Salad, Grilled Turkey Steak and Dessert Crepes with Cinnamon Pears
  • “Eastern European Specialties“- December 7, 10:30 – 1:30
    A stick-to-your-ribs menu including Borscht, Braised Pork Ribs and Prune Mousse
